Lightly spray sauté pan, and sauté veggies until onion becomes transparent (4-5 minutes). Set aside.
2, Whisk egg whites and milk with salt, pepper, and thyme. Re-spray the same sauté pan and gently pour egg mixture in. Cove and let eggs firm until fully cooked
Pour sautéed veggies onto one side of your omelet and carefully fold the other side over the top.
Transfer to plate. You can top with salsa for no extra points!
