Difficulty: Easy

WW points per serving: 3

Ingredients:

  • 13½ oz turkey kielbasa (uncooked)
  • 29 oz cannellini beans (canned), cleansed and drained
  • 14½ oz diced tomatoes (canned)
  • ¾ cup chicken broth (fat-free, reduced sodium)
  • 2 medium scallions, finely chopped
  • ⅛ tsp black pepper
  • 3 cups of lightly packed Swiss chard (uncooked), thinly shredded leaves

Preparation Instructions:

  1. Start by diagonally cutting the turkey kielbasa into chunks approximately 1½ inches in length. In your slow cooker, whether it’s a 5- or 6-quart model, combine the freshly cut kielbasa, rinsed beans, tomatoes (along with their juice), broth, finely chopped scallions, and the pinch of black pepper. After securing the lid, let this mix cook to allow the stew to condense slightly. This should take 4 to 5 hours if you’ve set your slow cooker on high, or around 8 to 9 hours if you prefer to cook on a low setting.
  2. Following this, incorporate the thinly cut Swiss chard leaves into your simmering stew. Replace the cover and leave the mixture to cook on the high setting until you observe the chard leaves starting to wilt, which usually takes around 5 minutes. Now your hearty stew is ready to serve. Split the contents evenly into 6 bowls, and it’s ready to enjoy.

What is turkey kielbasa? Turkey kielbasa is a type of smoked sausage that originates from Polish cuisine, specifically known as “kielbasa.” This particular variant uses turkey as its primary source of protein instead of the traditional pork or beef. This change makes it a leaner and healthier alternative while still providing a similar taste and texture. The sausage is usually flavored with various spices and herbs, such as garlic and marjoram, then it’s smoked to give it a distinctive rich and hearty flavor. Turkey kielbasa can be used in a variety of dishes, like stews, stir-fries, or simply grilled and served with mustard and bread. It’s pre-cooked, so it only needs to be heated before eating.
