Weight Watchers Salmon Mousse recipe

This is a lighter and healthier version of the classic salmon mousse recipe. It is delicious and makes a wonderful entree. Make sure to chill it for at least 3 hours before serving.

Ingredients
  • 240 g salmon (bones and skin removed)
  • 1 tsp. mayonnaise
  • 1⁄4 cup cold water
  • 1 tsp. gelatin
  • 1⁄2 cup strained Greek yogurt
  • 1 tsp. onion (grated)
  • 1⁄4 tsp. dried dill
  • 1 tsp. chopped fresh parsley
  • 1 tsp. lemon juice
  • pepper
Instructions
  1. Sprinkle the gelatin on the cold water and let stand for about 5 minutes.
  2. Heat the water until the gelatin melts.
  3. Puree the salmon with the yogurt and mayonnaise.
  4. Pour the gelatin into the salmon puree and add the grated onion, dill, parsley, lemon juice and pepper.
  5. Combine thoroughly and refrigerate until the mousse is partially set.
  6. Pour into two lightly oiled moulds and chill for at least 3 hours or overnight.
  7. Unmould by briefly holding in a bowl of warm water and inverting onto a serving plate. Serve spread on bread.
