Weight Watchers Pineapple Cucumber Salsa with Spring Onions Recipe

Pineapple and cucumber salsa with green onions – the fresh chili peppers provide a gentle kick and stimulate the metabolism.

Pineapple contains the anti-inflammatory and digestive enzyme bromelain as well as a large amount of vitamin C. Bromelain is very useful against arthritis, diabetic ulcers and to accelerate the healing of injuries. This valuable pineapple enzyme is very sensitive to heat. Therefore it is only found in raw fruits and freshly squeezed juice, but not in canned fruits or pasteurized juice!

Ingredients
  • 1 fresh pineapple
  • 250 g cucumber
  • 1 bunch spring onions
  • 1 small chilli pepper
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • salt, to taste
Instructions
  1. Peel the pineapple. Weigh 400 g of the pulp, dice finely and place in a bowl.
  2. Peel the cucumber, cut in half lengthways and core with a spoon. Also finely dice and mix with the pineapple cubes.
  3. Clean and wash the spring onions and cut into thin rings. Mix in as well.
  4. Wash, halve, core and finely chop the chilli pepper. Mix with the vinegar, honey and a little salt in a small bowl.
  5. Pour the sauce over the pineapple and cucumber mixture and mix well. Let the flavors combine for about 30 minutes, then season again to taste.
