WeightWatchers Fried Egg Tacos with Chile Jam recipe

6 Green/4 Blue Points
Ingredients:
2 tablespoons hot chili paste
1 tablespoon unseasoned rice vinegar
1 teaspoon honey
¼ cup non-fat plain Greek yogurt
Kosher salt
Cooking Spray
2 large eggs
2 warm corn tortillas
Thinly sliced scallions (for serving)
Directions:
  1. Mix hot chili paste, vinegar, and honey in a small bowl. Place yogurt in another small bowl; season with salt.
  2. Spray medium nonstick skillet over medium-high. Crack eggs into pan and cook, shaking pan occasionally to keep eggs from sticking to each other, until edges are golden brown, cook to desired doneness; season with salt. Set aside
  3. Spray same skillet and heat tortillas on both sides until just starting to brown. This will give the corn tortilla a better flavor and stop it from breaking while you eat.
  4. Divide yogurt between tortillas and top with eggs, chili jam, and scallions.
Serves 2
