Ingredients
  • 1 cup almond flour or 1 cup whole almonds, ground to a powder
  • 1¾ cups whole wheat pastry flour
  • 1 Tablespoon whole anise seeds
  • ½ cup pure maple syrup
  • ½ cup extra virgin olive oil
  • 1 Tablespoon vanilla extract
  • ½ cup sesame seeds
  • ½ teaspoon salt
Instructions
  1. In a skillet over medium heat, toast the anise seeds for about 3 minutes (or until fragrant). Transfer to a coffee grinder and crush to powder.
  2. In a bowl, combine the almond flour or ground almonds with the pastry flour.
  3. In a separate bowl, whisk together the syrup, oil, salt and vanilla.
  4. Stir the oil mixture into the flour mixture, cover, and let rest for about 20 minutes.
  5. Preheat the oven to 350 degrees F.
  6. Spread the sesame seeds on a work surface. Shape the dough into 2 8-inch logs, packing it tightly together so it doesn’t crumble.
  7. Roll the logs in sesame seeds, and place on a foil-lined baking sheet.
  8. Bake for about 45 minutes, or until firm and browned. Set the baking sheet on wire rack, and let cool for about 5 minutes.
  9. Using a serrated knife, cut each log into ⅓-inch-thick diagonal slices. Place the flat side down on foil-lined baking sheets.
  10. Bake for about 15-20 minutes, or until golden brown. Let cool on wire racks.
  11. Store in an airtight container for up to 2 weeks.
