These moist Angel Lush Cupcakes are low fat and only 90 calories each. Topped with icing and so delicious you won't believe how good they are.
Ingredients
  • 1 package (16 oz.) angel food cake mix
  • 1 package. (3.4 oz.) <a href="https://amzn.to/2SA6icW" target="_blank">Jell-O Vanilla Flavor Instant Pudding</a>
  • 2 cans (8 oz. each) crushed pineapple in juice, undrained
  • 2 cups assorted fresh berries (raspberries, blueberries and sliced strawberries)
  • 1 cup thawed <a href="https://amzn.to/2SB6gl9" target="_blank">Cool Whip whipped topping</a>
Instructions
  1. Heat the oven to 375 degrees F.
  2. Prepare the cake batter as directed on package and pour into 30 paper-lined muffin cups, filling each cup 2/3 full.
  3. Bake for about 12-15 minutes, or until the cracks feel dry and the tops are golden brown.
  4. Cool the cupcakes for about 10 minutes. Remove to wire racks and let cool completely.
  5. In a medium bowl, mix the dry pudding mix and pineapple until blended.
  6. Gently stir in the Cool Whip, and spread onto the cupcakes.
  7. Top with fresh berries.
