Weight Watchers Pineapple Cucumber Salsa Recipe

- 1 fresh pineapple
- 250 g cucumber
- 1 bunch spring onions
- 1 small chilli pepper
- 3 Tbsp apple cider vinegar
- 1 Tbsp honey
- salt, to taste
- Peel the pineapple. Weigh 400 g of the pulp, dice finely and place in a bowl.
- Peel the cucumber, cut in half lengthways and core with a spoon. Also finely dice and mix with the pineapple cubes.
- Clean and wash the spring onions and cut into thin rings. Mix in as well.
- Wash, halve, core and finely chop the chilli pepper. Mix with the vinegar, honey and a little salt in a small bowl.
- Pour the sauce over the pineapple and cucumber mixture and mix well. Let the flavors combine for about 30 minutes, then season again to taste.
