Weight Watchers Arroz con Pollo Recipe

This traditional arroz con pollo recipe uses a pressure cooker.
Ingredients
  • 1½ cups white rice
  • ¾ pound chicken breast, sliced into 1½ -inch strips
  • ¾ teaspoon chili powder
  • ¾ tablespoon vegetable oil, or as needed
  • ¾ teaspoon salt
  • ¾ teaspoon ground black pepper
  • ¾ cup water
  • ¾ cup tomato puree
  • ¾ teaspoon Mexican oregano
  • ¾ teaspoon salt
  • ¾ teaspoon ground black pepper
  • diced green bell pepper (optional)
  • sliced tomatoes (optional)
  • fresh cilantro (optional)
Instructions
  1. Season the chicken all over with ¾ tsp. salt, ¾ tsp. black pepper and chili powder.
  2. Heat the vegetable oil in an inner steel pot of pressure cooker set to Sauté on High. Sauté chicken in the hot oil, working in batches, for about 2 minutes on each side (until golden). Transfer the browned chicken to a steamer basket.
  3. Pour the water, tomato puree, rice, ¾ tsp. salt, ¾ tsp. black pepper and Mexican oregano into the inner steel pot of a pressure cooker. Place the trivet over the rice and the steamer basket with the chicken on top of the trivet.
  4. Lock the pressure cooker lid in place and set the steam vent handle to Sealing. Select Pressure Cook (Manual) and cook on High Pressure for about 10 minutes. Move the steam vent handle to Venting to quick-release the pressure.
  5. Spoon the chicken and rice into bowls and top with peppers, tomatoes and cilantro (optional).
