Combine the potatoes, garlic, onion, salt, pepper, thyme and broth in a 6-quart slow cooker. Cook on High for 4 hours or on Low for 8 hours.
Add 1½ cups cream and blend the soup using an immersion blender (or using a regular blender in batches) until smooth. If the soup is too thick, add the remaining ½ cup cream.
Serve with your desired toppings.
