In a large bowl, combine half of the Parmesan cheese with the mayonnaise, lemon juice, mustard, pepper and water; stir until well blended.
Add the arugula, spinach and half of the turnip, tossing well to coat.
Sprinkle with the remaining turnip and cheese. Serve.
