WeightWatchers Spinach and Arugula Salad Recipe

Ingredients
  • 4 cups baby arugula leaves
  • 4 cups baby spinach leaves
  • ¾ cup matchstick-cut or shredded turnip, divided
  • 1.5 ounces Parmesan cheese, finely grated and divided (about 6 tablespoons)
  • 1 tsp. Dijon mustard
  • ⅓ cup canola mayonnaise
  • ½ tsp. freshly ground black pepper
  • 3 Tbsp. fresh lemon juice
  • 2 Tbsp. water
Instructions
  1. In a large bowl, combine half of the Parmesan cheese with the mayonnaise, lemon juice, mustard, pepper and water; stir until well blended.
  2. Add the arugula, spinach and half of the turnip, tossing well to coat.
  3. Sprinkle with the remaining turnip and cheese. Serve.
