Serves: 24 muffins
- 3 large bananas or 4 medium bananas, mashed
- 2⁄3 cup unpacked brown sugar
- 3 Tbsp. vegetable oil
- cooking spray
- 2 cups all-purpose flour
- 1 large egg
- 1 large egg white
- 2 tsp. lemon peel, grated
- 1⁄3 cup powdered sugar
- 1⁄2 cup golden seedless raisins
- 1⁄3 cup buttermilk
- 1 1⁄2 tsp. baking powder
- 1⁄2 tsp. table salt
- 1 tsp. ground cinnamon
- 1 tsp. fresh lemon juice
- Preheat oven to 350 degrees F.
- Coat 24 mini muffin tins with cooking spray.
- Blend together the brown sugar and oil.
- Beat in the egg white, egg, lemon zest and bananas.
- In a separate bowl, whisk together the baking powder, flour, salt and cinnamon.
- Gently stir half of the flour mixture into the banana mixture; stir in the remaining flour mixture, buttermilk and raisins.
- Divide the batter among muffin pans.
- Bake for about 10-12 minutes (until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pans for about 10 minutes before inverting onto a rack to cool completely.
- To make the frosting, blend together the lemon juice and powdered sugar.
- Drizzle the frosting over the cooled muffins.
