WeightWatchers Yogurt Fruit Bars Recipe

- 1 (6 ounce) package mixed dried fruit, coarsely chopped
- 1 1⁄2 cups whole wheat flour
- 1⁄2 tsp. baking powder
- 1 tsp. baking soda
- 1⁄2 tsp. ground ginger
- 1 tsp. cinnamon
- 1 cup plain fat-free yogurt or 1 cup low-fat plain yogurt
- 1⁄3 cup chopped walnuts (optional)
- 1⁄4 cup apple juice concentrate
- 1 large egg
- nonstick cooking spray
- 2 Tbsp. oil
- Preheat the oven to 350 degrees F.
- Mix all the dry ingredients in a large bowl. Add the walnuts (if using) and dried fruits.
- Combine the egg, yogurt, oil and apple juice concentrate in a medium bowl.
- Make a well in the center of the dry ingredients and add the wet ingredients until blended.
- Coat a 9x13-inch pan with vegetable spray, spread the batter in the pan.
- Bake for about 45-50 minutes or until done. Let cool for about 10 minutes before slicing.
- Slice into 8 servings. If desired, freeze in individual portions.
