WeightWatchers Asparagus Potato Pizza Recipe

Cream cheese is the key to a shortcut white pizza sauce, while fresh asparagus and hearty potatoes bring restaurant fare into your kitchen.
Ingredients
  • pizza dough
  • ¼ lb. new potatoes
  • ¼ lb. fresh asparagus spears, trimmed, cut lengthwise in half then crosswise into 3-inch lengths
  • 1 clove ga4 green onions, thinly sliced, dividedrlic, minced
  • 1 tablespoon olive oil
  • ¾ cup shredded mozzarella cheese
  • 3 oz. Philadelphia cream cheese
  • 2 tablespoons shredded parmesan cheese
Instructions
  1. Heat the oven to 450 degrees F.
  2. Cook the potatoes in boiling water until tender (about 15 minutes) - do not overcook.
  3. Drain the potatoes and rinse with cold water to cool completely. Drain the potatoes again, then cut into thin slices.
  4. On a lightly floured surface, roll the pizza dough into a 12-inch circle. Press onto the bottom of 12-inch pizza pan sprayed with cooking spray, stretching the dough as necessary to fit.
  5. Let stand for about 10 minutes. Meanwhile, mix the oil and garlic.
  6. Spread the pizza crust with half the garlic oil; top with half the onions and mozzarella.
  7. Toss the asparagus with the remaining garlic oil and spread over the pizza.
  8. Top with the potatoes, cream cheese (broken into pieces) and Parmesan cheese.
  9. Bake until the crust is golden brown (about 15-18 minutes).
  10. Sprinkle with the remaining onions and serve.
