WeightWatchers Cheesy Broccoli Soup Recipe

Ready in just 30 minutes, this cheesy broccoli soup is so good you may think you're dreaming. You can also add other frozen vegetables to the soup, like frozen chopped spinach, frozen asparagus spears or frozen cauliflower.
Ingredients
  • 1 package (10 oz.) frozen chopped broccoli, thawed and drained
  • ¾ lb. (12 oz.) Velveeta cheese, cut into ½-inch cubes
  • ¼ cup chopped onions
  • 2 tablespoons butter
  • 2-1/2 cups milk
  • 2 tablespoons flour
  • ⅛ teaspoon pepper
Instructions
  1. Melt the butter in large saucepan on medium heat. Add the onions and cook, stirring constantly, for about 5 minutes (or until the onions are crisp-tender).
  2. Add the flour and cook for about 1 more minute or until bubbly, stirring constantly.
  3. Stir in the milk. Bring to a boil and simmer on medium-low heat for about 1 minute.
  4. Add remaining ingredients, stirring. Cook for about 5-8 minutes, stirring occasionally, until the soup is heated through and the Velveeta cheese has completely melted.
