Cucumber and avocado play off each other when blended in a dressing that’s crisply flavored yet rich in texture. Try with a green onion, chopped kale and arugula salad for a green-on-green starter.
Ingredients
½ cup chopped peeled and seeded cucumber
½ large ripe avocado, chopped
1 tablespoons. fresh lemon juice
1 tablespoons minced fresh dill
1 teaspoon pure maple syrup
Instructions
Place all the ingredients in a chopper or mini food processor.
Add ¼ cup water, and blend until very smooth.
Season with salt and pepper to taste.
