Incorporating veggies into the morning meal is a great idea, and it's not hard or time-consuming to do. You can spend a few minutes prepping everything the night before (including beating the egg-cheese mixture) to make the next morning a breeze.
In a medium bowl, stir the eggs with a whisk until lightly beaten. Add the feta cheese, salt and pepper, whisking to combine.
Heat a large nonstick skillet over medium heat. Add the canola oil, swirling to coat.
Add the tomatoes and onions, and cook for 1 minute, stirring occasionally.
Add the spinach; cover and cook for about 1 more minute or until the spinach starts to wilt.
Stir the mixture. Pour the egg mixture into pan and cook, stirring gently to incorporate the vegetables, for about 1½ more minutes or until the eggs are soft-scrambled.
Serve over toast.
