WeightWatchers Apple Cider Donuts Recipe

Moist, tender, and super flavorful, these are the best baked apple cider donuts I've ever had, and they are easy to make, too.
Ingredients
  • 1¼ cups all-purpose flour
  • 1½ teaspoon baking powder
  • ½ cup sugar
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup apple cider
  • ⅛ teaspoon ground cloves
  • ⅓ cup soymilk
  • 1½ teaspoon egg replacer, such as Ener-G
  • 4 Tablespoons vegan margarine
  • 5 Tablespoons apple butter or applesauce
  • ½ cup superfine sugar
Instructions
  1. Preheat the oven to 350 degrees F. Coat a doughnut pan with cooking spray.
  2. In a large bowl, whisk together the sugar, flour, nutmeg, cinnamon, baking powder, cloves and salt.
  3. In a small saucepan, bring the cider to a boil and boil for about 10 minutes, or until the liquid is reduced to ⅓ cup; remove from the heat.
  4. In a small bowl, whisk the egg replacer with 2 Tablespoons water; stir this mixture into the cider reduction.
  5. Add the margarine, apple butter and soymilk, stirring until the margarine is melted. Cool.
  6. Stir the cider mixture into the flour mixture.
  7. Fill each donut mold half full with batter.
  8. Bake for about 12 minutes, or until a toothpick comes out clean.
  9. Roll the hot donuts in superfine sugar.
