WeightWatchers Cabbage Apple Slaw Recipe

This nutritious slaw is packed with surprises: citrus, cilantro, and crunchy-sweet apples.
Ingredients
  • 3 cups red cabbage, coarsely grated
  • 1 Granny Smith apple, cored and cut into matchsticks (11/4 cups)
  • 1 medium orange bell pepper, thinly sliced
  • 3 Tablespoons fresh orange juice
  • 1 cup cilantro leaves, chopped
  • 2 Tablespoons apple cider vinegar
  • 2 teaspoons whole-grain Dijon mustard
  • 1 Tablespoon agave nectar
  • 2 teaspoons olive oil
Instructions
  1. In a large bowl, toss together the apple, cabbage, cilantro and bell pepper.
  2. In a small bowl, whisk together the remaining ingredients in small bowl.
  3. Drizzle the dressing over the cabbage mixture, and toss to combine.
  4. Season with salt and pepper, to taste.
