- 3 cup all-purpose flour
- 1 cup flaked coconut
- 1 can (8 ounce) crushed pineapple, drained
- 1 cup walnuts, chopped
- 2 cup very ripe bananas, mashed
- 1 tsp baking soda
- 3⁄4 tsp salt
- 2 cup white sugar
- 1 tsp ground cinnamon
- 3 egg, beaten
- 1 cup vegetable oil
- 2 tsp vanilla extract
- Preheat the oven to 350 degrees F (175 degrees C).
- Grease two 9 x 5 inch loaf pans.
- In a large mixing bowl, combine the cinnamon, sugar, baking soda, salt and flour.
- Add the coconut, vanilla extract, pineapple, banana, oil, eggs and walnuts, and stir until just blended.
- Divide the batter evenly into the prepared pans.
- Bake for about 60 minutes (or until a toothpick inserted into the center of a loaf comes out clean).
- Let cool in the pan for about 10 minutes, then remove to a wire rack to cool completely.
