WeightWatchers Hawaiian Banana Nut Bread with Pineapple and Coconut Recipe

This Hawaiian bread is absolutely fabulous! Very moist with excellent flavor.
Ingredients
  • 3 cup all-purpose flour
  • 1 cup flaked coconut
  • 1 can (8 ounce) crushed pineapple, drained
  • 1 cup walnuts, chopped
  • 2 cup very ripe bananas, mashed
  • 1 tsp baking soda
  • 3⁄4 tsp salt
  • 2 cup white sugar
  • 1 tsp ground cinnamon
  • 3 egg, beaten
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
Instructions
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Grease two 9 x 5 inch loaf pans.
  3. In a large mixing bowl, combine the cinnamon, sugar, baking soda, salt and flour.
  4. Add the coconut, vanilla extract, pineapple, banana, oil, eggs and walnuts, and stir until just blended.
  5. Divide the batter evenly into the prepared pans.
  6. Bake for about 60 minutes (or until a toothpick inserted into the center of a loaf comes out clean).
  7. Let cool in the pan for about 10 minutes, then remove to a wire rack to cool completely.
