WeightWatchers Mint Crackers Recipe

These are the BEST! They taste just like the Thin Mint Girl Scout Cookies but they're so much more affordable, and so easy, even kids can make this in a snap!
Ingredients
  • 80 buttery round crackers
  • 1 lb bittersweet chocolate chunks
  • 1⁄2 tsp peppermint oil extract
Instructions
  1. Melt the chocolate over hot tap water for 15-20 minutes, using the double boiler method. Stir, being careful not to cook or get water into the chocolate.
  2. After the chocolate has melted, stir in a couple drops of peppermint extract into it.
  3. Dip the crackers into the melted chocolate, then place onto a cold cookie sheet, and put into the refrigerator to set.
  4. After a few minutes, take them out and package in candy cups. The cookies are best kept at room temperature or in a cool, dry place away from any odors.
