- 1 lb fillets tilapia
- 1⁄2 cup cornmeal
- 1 tbsp brown mustard, or honey mustard
- 1⁄2 tsp vinegar
- 1⁄4 cup milk
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1⁄2 tsp thyme
- 1 tsp paprika
- 1⁄2 tsp cayenne pepper, adjust to your taste
- 1⁄2 tsp black pepper
- 1 lemon, cut into wedges (optional)
- Mix the mustard, vinegar and milk, and let set for about 15 minutes - his will make the dressing to coat the fish.
- In a separate bowl, mix the cornmeal with all the seasonings.
- Dip the fish fillets into the milk mixture and then into the cornbread mixture.
- Brush a broiling pan with a little olive oil or spray with cooking spray.
- Place the fish fillets on the prepared pan and place the pan under the broiler, 4 inches from heat.
