Weight Watchers Black Bean Burger Recipe

These delicious vegetarian burgers also work with any other type of canned beans. Pile it high with creamy avocado, red onion, and a juicy tomato slice for a complete treat.
Ingredients
  • 1 (15-oz.) can unsalted black beans, rinsed and drained
  • 1 (1-oz.) slice whole-grain bread, toasted and torn into pieces
  • 1 large egg, lightly beaten
  • 1 tablespoon chopped garlic
  • ¼ cup grated onion
  • ⅓ cup coarsely chopped walnuts
  • 1½ teaspoons fresh lime juice
  • ½ teaspoon grated lime rind
  • ¾ teaspoon ground cumin
  • ½ teaspoon hot sauce
  • 4 teaspoons olive oil
  • ¾ teaspoon salt
Instructions
  1. Place the bread in a food processor and pulse 5 times. Transfer to a bowl.
  2. Combine the beans, garlic, onion, cumin, lime rind and juice, and salt in a food processor; pulse 4 to 5 times.
  3. Add the egg,bean mixture, hot sauce and walnuts to the bread crumbs; stir well.
  4. Divide the mixture into 4 equal portions, shaping each portion into a ¾-inch-thick patty.
  5. In a large nonstick skillet, heat the olive oil over medium-high heat. Add the patties to the pan; reduce the heat to medium, and cook for about 4 minutes on each side (until browned).
  6. Serve in a bun with avocado, tomatoes and red onion.
