WeightWatchers Dijon Chicken Fettuccine Recipe

This is out of an old WW Cookbook called "Quick Cooking for Busy People". I love the full, bold flavor of that Dijon dressing.
Ingredients
  • 1 (10⅛ ounce) package cooked boneless skinless chicken breasts, shredded
  • 4 cups broccoli
  • 1 (9 ounce) package fettuccine pasta
  • 1⁄3 cup fat-free honey-dijon salad dressing
  • 1 tablespoon Dijon mustard
  • 1⁄4 cup red wine vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon olive oil
  • 1⁄4 teaspoon ground pepper
Instructions
  1. Cut the pasta in half before cooking.
  2. Cook the pasta according to the directions on the package, omitting any fat or salt .
  3. During the last 4 minutes of cooking time, add the broccoli to the pasta.
  4. Drain well and place in large bowl.
  5. While pasta is cooking, combine the honey-dijon dressing and the red wine vinegar, Dijon mustard, olive oil and minced garlic; stir well.
  6. Pour the dressing mixture over the pasta mixture.
  7. Add the shredded chicken and toss gently.
  8. Sprinkle with pepper and serve. Bon appetit!
