WeightWatchers Breakfast Sandwich Recipe

I need a little substance in my morning meal, so I created this breakfast recipe that fills me up and is super tasty. I sometimes add a slice of tomato and a thin slice of ham or turkey. Makes a great snack too.
Ingredients
  • 1 hard-boiled egg, sliced into 4 or 8 pieces
  • 1 whole wheat English muffin
  • 1 teaspoon mustard
  • 2 teaspoons low-fat mayonnaise
  • 1⁄4 teaspoon vinegar
Instructions
  1. Mix the mustard, mayonnaise and vinegar to make a sauce.
  2. Cut the muffin in half and toast.
  3. Pour the sauce over each muffin half and place the egg slices on top.
  4. Season with salt and pepper to taste. Eat open faced.
