WeightWatchers Tender Roast Chicken Recipe

If you like KFC's tender roast chicken, try this (almost) copycat recipe. You will love it!
Ingredients
  • 1 whole roasting chicken, cut into pieces
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon paprika
  • 1⁄2 teaspoon pepper
  • 1⁄4 teaspoon thyme
  • 1⁄2 teaspoon lemon-pepper seasoning
Instructions
  1. Preheat the oven to 375 degrees F.
  2. Prepare the spice blend by combining the salt, pepper, paprika, thyme and lemon-pepper seasoning in a small bowl.
  3. Place the chicken pieces onto a baking sheet, skin side up.
  4. Bake for about 20 minutes.
  5. Remove the chicken from the oven and let cool for about 5-10 minutes.
  6. When the chicken has cooled a little, remove the skin, sprinkle the entire surface with a light coating of the spice blend and place back on the baking sheet.
  7. Bake for about 10 more minutes (until done).
