WeightWatchers Broccoli Quiche Recipe

Serves: 6 servings
- 20 ounces frozen broccoli, chopped
- 1 1⁄2 cups 1% low-fat milk
- 3⁄4 cup Egg Beaters egg substitute
- 3⁄4 cup bisquick low-fat baking mix
- 2 garlic cloves, chopped
- 1 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1 medium red pepper, chopped
- 1 medium onion, chopped
- 4 ounces part-skim mozzarella cheese
- Thaw, rinse and drain the broccoli.
- Put half of the broccoli in a 11x7 glass pan sprayed with Pam.
- Put half of the peppers, onion and all the cheese on top.
- Put the remaining broccoli, peppers and onion on top of that.
- Blend the milk, bisquick, egg beaters, garlic, salt and pepper in a blender until smooth.
- Pour the mixture over the broccoli in the pan.
- Bake at 400 degrees F for about 50 minutes (until lightly browned).
- Let cool a little, then cut into 6 pieces and serve.
