Weight Watchers Arugula and Peach Salad Recipe

- 4 peaches, pitted and sliced into thin slices
- 10 cups arugula
- ⅔ cup slivered almonds
- 2 green bell peppers (2 cups), finely chopped
- 1 Tbs. fresh orange juice
- 2 Tbs. white balsamic vinegar
- 2 Tbs. olive oil
- ½ tsp. grated orange zest
- ¼ tsp. salt
- ⅛ tsp. cayenne pepper
- In a large bowl, combine the peaches, arugula, almonds and bell peppers.
- In a separate bowl, whisk together the orange juice, vinegar, oil, orange zest, cayenne pepper and salt.
- Just before serving, toss the salad with the dressing.
